Along the river Ramos, two sisters – who really don’t want your input – have transformed a humble shack serving only cortadillo stew into a hot dining destination. Just be cautious of their feisty parrot; it has a penchant for biting. Meanwhile, a short drive away in Allende, another eatery is gaining fame for its innovative empalmes, which creatively incorporate traditional stews into stacked tacos.
